Our efforts to offer a wide range of plant-based foods at the Sofitel Munich Bayerpost began back in February 2019. At that time, our Executive Sous Chef, Steve Uhlig, decided to switch his own diet to purely plant-based foods for a year. This was done to feel the need to be more creative in what he cooks for himself and what we can offer our guests as innovative dishes. Steve completed an additional qualification to become a certified vegan chef, and he now passes that knowledge on to all of the kitchen staff.

The start of the day is important – as the name suggests, the fast of the night is broken. We want to fill up on energy for the day and, above all, now give our bodies what they need for a productive day. Consequently, the first point of change was our breakfast buffet.  At our breakfast buffet there is a separate section with plant-based products for a healthy diet and a more sustainable approach to our planet.

Likewise, vegans should not compromise on a multi-course menu – so the goal for our Delice la Brasserie was to create at least 6 dishes on our brasserie menu so that there is the option of eating a full 3 or 4 course meal with vegan options only.

To further reduce the carbon footprint of our brasserie, we started a partnership with a local SoLaWi (solidarity farming) that will produce the vegetables and greens we need for the restaurant near Munich.

A sustainable approach was also needed for our meetings & events. After a vegan promotion for only a few months, this evolved into a regular part of every banquet buffet. Already almost 60% of our food options in Meetings & Events plant-based.
